Why would a love poem be suited for sonnet form?

Shakespearean language tends to be more ornate and beautiful.

The rhythm and rhyme follow a set scheme, leading to a more pristine, flawless presentation.

Fourteen lines is just enough space to declare one's love. Anything less would prove that the love was indeed fraudulent.
