there is original yield and desired yield

divide the desired by the original the result will be Conversion Factor

For , the column of yield = 4 serving

Conversion Factor = 4 / 8 = 0.5

So, for each value at the original multiply by 0.5

So,

1 1/2 * 0.5 = 3/4

For 80 serving:

Baking powder = 1 * 10 = 10

salt = 1/4 * 10 = 2 1/2

cinnamon = 1/2 * 10 = 5

nutmeg = 1/8 * 10 = 1 1/4

egg = 1 * 10 = 10

sugar = 1/2 * 10 = 5

buttermilk = 1/2 * 10 = 5

vegetable oil = 1/4 * 10 = 2 1/2

vanilla = 1/2 * 10 = 5

chocolate chips = 3/4 * 10 = 7 1/2
