Answer is true of course. The whole definition of sensory evaluation is our analysis of taste, smell, sound, feel and appearance of food. That's how we determine food my good friend and here is an example. Say for example I have some sour patch, of course I'm going to eat it but wait, I take a sample by eating it with my mouth, it goes on my tongue with the taste buds that tell me if I should keep eating or spit it out, taste buds are like the judges of court orders, they tell u if u should keep eating it do to its flavor or spit it out due to dislike, second, I smell the sour patch, its covered with sugar of course and it smells delicious so that's a hint of what it is, sound, well u cant really hear food, unless u count food chewing/smacking or u shake sugar, feel, sour patch are tiny so when u feel it its usually soft or hard depending where u buy it and where u put it, and the appearance of it is tiny and looks like cartoon characters with colors, so this is all the details of the sensory evaluation, hope this helps.
