Always been taught that the vacuole holds the cell's water. I don't know about the other things

The correct answer is central vacuole.

The central vacuoles are found in the plant cell which is a fluid filled organelle. The vacuole is filled with water, some salts, minerals and protein which helps to maintain the cell shape.

This is very big sized organelle that maintains the rigidity and turgor pressure of the cell.

This also maintains the pH of the cell and transport of the materials from inside to outside of the cell.
