Why do chemists sometimes refer to the process of joining sugars as condensation reactions?

The answer to this question would be because reaction that joining sugar will produce a water molecule.

The condensation reaction is a reaction that will combine two or more molecule and produce a small molecule like water. Reaction to create disaccharide(lactose, sucrose) sugar will need two monosaccharide sugar molecule and produce a bigger sugar(twice as big) and water.
