What senses, outside of hearing, would likely be impaired if a person were somehow missing all of the apparatus of the ear (including the outer, middle, and inner ear)?

Besides not being able to hear a person who can’t usually hear can’t talk to other people. They have to use sign language to speak to others, and even that is difficult because a lot of people aren’t taught it. Another sense is that they wouldn’t be able to protect themselves from immediate danger. Such as knowing something as simple if a car was going to hit them. So a lot of the time these types of people need an aid whether that is a service dog or some companion that helps them with their daily activities.
