The statement that best describes Arab activity along the east coast of Africa in the Middle Ages is:

Arabs conquered, converted, traded, enriched, and enslaved Africans along the coast.

Slave-trading flourished in these times. Most of the slaves were captives from the interior of Africa. They were sold to throughout the Middle East. Because the Arabs have already conquered the sea routes before plundering the east coast of Africa, slaves were also transported to countries that have high demand for plantation labor.

The increasing demand for labor resulted to the increasing number of captives who became slaves. It came to the point that tens of thousands of captives were taken every year to supplement the demand for manual and menial laborers.
