Romeo openly challenges death as long as he can wed juliet; why is this ironic

Because he's going to die after he marries her. That's an example of dramatic irony, rather than verbal irony. The audience knows going in that the lovers are going to be dead at the end of the play, no matter what. Hope this helps :)
