Only a few bee species can make "honey." The bees that do make it store it since it's a good source of energy that can sustain a large population. Some kinds of bees will hang out in large groups to make honey and beeswax (to store it and young in). Honey and honeycombs help sustain a hive in winter or harsh seasons when pollen might not be as readily available. There are some bees that aren't as social, they don't hang out in large communities. These guys don't collect nectar to make into honey, they only collect enough to feed their kiddos. Bumble bees are a good example. Honey wasps are too, honey is in their name and they're not really bees since they sting...a lot. Their low production is why we don't use them in commercial honey operations.
