As my bae Handsome Jack says:
"Choking is something you do when you eat too fast. Crushing some windpipe with a watch chain is actually referred to as strangling."

Also.. never headbutt a belt sander like Helena Pierce

Choking is accidental, as in when the throat is obstructed or the organism has difficulty breathing (or the inability to). Strangling is when someone purposely obstructs another organism's airway or makes it difficult or impossible for them to breathe. In fewer words, choking is accidental and strangling is purposeful.

Also, to (mostly) quote Handsome Jack, "...choking is something you do when you eat too fast. Crushing [someone's] windpipe with [a] watch chain, [that] is actually referred to as strangling."
