The money found in his drawer at home is exactly the same amount missing from the restaurant. Police questioned witnesses who saw Joe with the extra cash. This evidence made Joe the most likely suspect.

The evidence that the police could use to prove that Joe stole the money are the following:
1. The same amount of money (lost money from the victim) has been to Joe's pocket. If the police can prove that Joe is not capable of producing this money and nobody can give this money, then the money he stole or get it illegally.
2. The DNA test of the blood in the knives found is the crime scene.
