If a person is given the assignment to cut raw poultry for the entire shift, sanitation of the counter top, cutting board and any other equipment that needs to be used should be before using it and after the person is done using it. Sanitation is necessary before and after to promote cleanliness and for the safety of the people who are going to buy it.
