The value of Z. whatever it may be is more than 34.

As you can see, the equation is z>34. Now, we can see it's using the greater than sign, as you read the equation as z is greater than 34. But, lets say we replace the z with 45. Now it's 45>34, and which is clearly bigger? 45 is. So, we use the symbol to infer what the equation means. And can assume whatever z is is bigger than 34.
