In 1850 there was a large snowshoe rabbit population in Manitoba, Canada. Over the years, the winter coloration (the color of the rabbit's fur) of the surviving rabbit population changed. It's the people. When civilization arrives, it's much easier for the grays to survive the winter, whereas people aren't of any benefit to the whites.
The chart doesn't say there are fewer whites. It just shows percentages.
