Keep refrigerated foods below 40 degrees F. Serve hot foods immediately or keep them heated above 140 degrees F.

There is a need to cook the food to safe internal temperatures. Just as the food looks done it does not mean that it is done. The best means to find that the meat, egg dishes, and poultry are cooked safely is to utilize a food thermometer.

The safe internal temperature for all the meat mixtures and ground meat is 160 degrees F. There is a need to cook all the poultry to a safe internal temperature of 165 degrees F. As not cooking the food to safe temperatures signifies that bacteria may still be thriving within and may lead to illness on consumption.
