How does bryson describe the eaters in his house and in iowa in the 1950s?

Bryson describes themselves as more cautious eaters in the house. When they were presented with food which they are not familiar - on a rare occasion, on planes or trains or when invited to a meal cooked by someone not from Iowa, they tend to tilt the food carefully with a knife and examining every angle of it.
