Which type of telescope would we use to study new stars inside the giant gas cloud and why?

To penetrate the material and other interference normally associated with gas clouds (obscuring of light images and electromagnetic/charged particle interference), the use of Infra-red telescopes is ideal. The high-frequency waves are able to pass through the nebula clouds with minimal attenuation and scatter.
