The transformation of starch into sugar begins in our mouth. Amylase is an enzyme that will break down starch into sugar. This is why when Chewing a cracker it begins to taste sweet because the enzymes in the saliva break down the starch into glucose sugar.

Answer:

Salivary amylase chemically breaks down the starch from the cracker into simple sugars maltose and glucose. This is why the cracker became sweeter.
