The oral phase of swallowing is under voluntary control and the pharyngo-esophageal phase is under is controlled by autonomic reflexes. Oral or buccal phase is the voluntary part of swallowing, the food is moistened with saliva and chewed, food bolus is formed and the tongue pushes it back of the throat. The pharyngo-esophageal phase is initiated by touch receptors in the pharynx as the bolus of food is pushed to the back of the mouth by the tongue, or by stimulation of the palate.
