The formula for area of a cube (cheese cube) is side cubed. If the first cube is 2 per side length, the volume is 8 units cubed.
The next one is nearly the same. We just cube the 4 instead to get 64.
Now, to find how much times larger the large is as opposed to the small, we can set up this equation, or so it mentally:
8x = 64
Divide both sides by 8 to isolate x:
x = 8 times larger.
