Suppose that the dominant, true-breeding parent was accidently self-pollinated instead of crossed with the true-breeding recessive parent. How would this affect the phenotypes of the F1 and F2 generation?

Since the parent that self-pollinated only carries dominant alleles, the phenotypes for the next generations would also only carry the dominant alleles, meaning that whatever colour the self-breeding parent was, is the same colour the next generations would be, as theirs no recessive genes being passed on!
