We should know that , 1 lb = 16 oz


The amount of purchased celery = 12 lb = 12 x 16 = 192 oz

Trim and cut it into pieces, ending up with 5.5 oz of trim.


The yield will be = 192 / 5.5 = 34.91


Taking the smallest integer number.


So, the yield = 34


which will be equal = 34*5.5 = 187 oz



So, the yield percentage = 187/192 x 100 = 97.4%

The Answer is: A. 97%

Why?

First, we need to know that
1 lb = 16 oz

So, we've just purchased
12 lb = 192 oz

We have ended with 5,5 oz of trim, it means that we've used 186,5 oz of celery
(192 - 5,5 = 186,5)

To know the yield percentage we just need to divide the used celery by the purchased quantity


(186,5)/(192) = 0,971

Multiplying it by 100 (in order to convert to percentage amount) we have:


0,971 * 100 = 97,1 = 97 %
