This is true. Words like "monkey", "ray", and "donkey" all follow this rule.

Monkey --> Monkeys

Ray --> Rays

Holiday --> Holidays


However, if the ending y is not preceded by a vowel, then the plural ending is "-ies". For example:

Sky --> Skies

Baby --> Babies

Country --> Countries
