What do we call the process of water turning into a atmospheric gas?

When water becomes a gas, all of the molecules go flying apart and become a gas (much like when you boil water and the water begins to steam) . The process of gas molecules leaving the liquid to go into the gas is called "evaporation." The opposite process is called "condensation."
