Is, 'The fall is beautiful, because the leaves change from green to amazing reds and yellows' a complex sentence? If it is than can you take out the 'amazing' and it still be a complex sentence?

Yes, if you add something else to replace it. But if you don't then the sentence would be a simple-structured one with a basic base. It wouldn't sound as interesting without the adjective. You could also try and add a metaphor or a simile or even alliteration, just to jazz it up!
