The main function of the liver is the production of bile. Bile is important for the digestion of fats. Fats are oily and hydrophobic, which means they don't dissolve much in water or water-based liquids. Because the liquid in the stomach and intestines is mostly water, fats that are consumed in the diet stick together in large blobs. Bile helps to break up these blobs of fat.
