Subject is different from a theme because... Subject is just that one thing, like in school Subject is "Language Arts" "Math" "Science" etc.. So if you have a theme its the subject of talk. For instance a piece of writing or a persons thoughts.

A subject is the Topic in which an author decides to use through the whole story
A theme is the message that is only told at a certain part of the book
