But Nitrogen can occasionally have 4 bonds because it has the atomic number 7, so it’s electron configuration is 1s\2 2s/2 2p/3, giving it 5 valence she’ll electrons. To form a full outer wheel of 8 it needs to share 3 eletrons, therefore forming 3 covalent bonds!
