The rice will absorb up the water as long as it isn't boiling.

When a rice is left in a pan of water overnight, the rice will absorb the water. This process is called osmosis. A solvent, in this case water, passes through a semi permeable membrane, the rice outer membrane, from a less concentrated to a more concentrated solution.
