The correct answer is the third option "we ate pistachio ice cream-which is my favorite-and played laser tag".

While a RESTRICTIVE clause adds essential information about the noun it modifies, the NON-RESTRICTIVE clause is also called "non-essential clause" because it could be removed without affecting the information. In this case, if we remove "which is my favorite" the main message of the sentence remains untouched.
