Hypertonic solution contain more solute than solvent. The cucumber was soaked in hypertonic solution. Water pass out of the sap vacuole making it shrink because the external solution has a higher osmotic pressure than the cucumber. The cells of cucumber shrink because the cytoplasm pulls away from the cell wall leaving a gap between the wall and plasma membrane. This is called plasmolysis.
