the truck is carrying 400 gallons total, each crate of soda bottles contains say "x" gallons, then low and behold the back of the truck opens up and loses 5 crates with "x" gallons each, so what's leftover is 340 gallons of soda.

Hello!

400 - 5x = 340

if you start with 400, then lose 5 crates with unknown amount, then x will represent the unkown.

so 400 - 5x = 340 is your answer.
