You have to let it rest after it ha cooked, but before it's sliced. (C)
You put a foil to keep it warm, and the meat will be more juicy.
If you cut it right after, the liquid inside will get out.
When you cook a piece of meat, the liquid go in the middle. So, if you let it rest, the liquid will be redistributed in all parts of the meat.
