  • A fatty Acid is a long carbon chain with the end carbon double bonded to oxygen and to a hydroxyl (OH) to form a carboxylic acid. Fatty acids vary in length and in the number and location of double bonds. Three fatty acids linked to a glycerol molecule form fat.
  • There are three classes of fats namely; triglycerides, phopholipids, and sterols. Triglycerides are made up of three fatty acids and a glycerol backbone, like the figure above.
