Emulsification is a process in which large fat globules are made into smaller fat globules on which lipase enzyme can act. Lipase is the actual enzyme which helps in fat digestion. It is produced by pancreas. But lipase can act on only emulsified fat molecules. Bile pigments are bilirubin and biliverdin which are responsible for the greenish yellow color of bile .
