Pancreatic enzymes acts on glycogen and starches with the help of amylase enzyme. Pancreatic amylase breaks down polymers of alpha-linked glucose including starch and glycogen. The a-amylase catalyses the hydrolysis of the internal α-1,4-glycosidic linkages present in starch and glycogen which results into maltose, glucose, and maltotriose units.
