actually, they are all correct. i mean, assuming what somebody goes by is something many people do even though it can be rude in some situations. it's much more respectful using they pronouns on people you do not know

buuut, if the assignment thinks that you cannot refer to a single person as they which is incorrect, the second choice would be correct
