Amylase is an enzyme synthesized in the pancreas and salivary glands, so it is present in the human saliva. The main function of this enzyme is to catalyze the hidrolisis of starch (or amylum, are complex carbohydrates present in some plant-based food, such as in rice and potates).
In the stomach, the most important digestive enzyme is called pepsin. This protein is produced in the stomach walls and it breaks down the proteins into smaller particles such as peptides and amino acids. Another stomach enzyme is the gastric lipase, which catalize lipid hydrolisis.
