What are the causes and how to fix the following baking problems:

1. cake has a heavy texture
2. the cake has an open course texture
3. the cake has not risen

1 when the cake has a heavy texture you put to much flour

1) if the cake has a heavy texture the flour might not be light enough for the dough or just because it doesn't have enough air in it
SOLUTION: fold some more air into it, or invest in some different flour.
