You are talking formal. Está is formal and estás is informal. If you know there first name you can use informal conjugation ( Tú ), but if you know only there last name or they are older, then use the formal conjugation (él/ella/usted).

Usted. Would be the answer. The question asks how are you? Usted is a formal way of addressing someone.
Igualmente means the same.
Encantado means it was a pleasure to meet you,
