When you use a bottle of vinegar-and-oil salad dressing, you have to shake it up for mixing. Why?

Answer: The vinegar is polar and way more dense, oil is non-polar and less dense and so the vinegar will settle at the bottom. For this mixture, they have to be shaken for the vinegar and oil to be evenly dispersed when pouring it.
