"Let us go then, you and I, When the evening is spread out against the sky Like a patient etherized upon a table; " How do these lines help establish themes in the poem?

They serve as an invitation to find peace and tranquility in nature.
They express natural beauty and the healing powers of nature.
They suggest sickness in the modern world and the inability to act.
They establish an optimism about healing the world and forming meaningful connections.

Someone being "etherized" is someone being put under anesthesia, or being put to sleep on a table. Taking this idea that the sky is spread out, tranquil, and calm like someone being put to sleep makes for a peaceful and tranquil opening for the poem.
