Fatty acids are released, between meals, from the fat deposits in adipose tissue, where they are stored as triglycerides. Lipolysis involves the removal of the fatty acids chains from the glycerol top which they are bound in their storage. The fatty acids then undergoes oxidation to provide energy when need arises.
