How were steam-powered ships different from sail boats?

Steam powered boats are different than sailboats because steamboats were faster

Sail boats got their power from the wind, so if you went sailing on a day with little wind, you would have a hard time sailing. On the other hand, steam-powered ships had boilers and the steam that evaporated powered the ship. Steam-powered vessels were faster than sail boats, but they were also more dangerous because the boilers were at risk of blowing up.
