So I'm writing A long response to a question and I just need to know if this is a correct thing to do when quoting a sentence. (The picture is the original sentence)

This is how I paraphrased it : "I think it likely that the training most in use is of this unconscious sort, and is guided...by an automatically- working taste--a taste which selects and rejects without asking you for any help"

Yes you did it correctly. When quoting a sentence it needs to be put in quotation marks to show that those are not your words but somebody else's.
